Quinoa Muffin Cups

  • 1 green or red bell pepper, finely chopped
  • 1/2 onion, chopped
  • 2 C. cooked quinoa (about 3/4 cup uncooked)
  • 2 eggs
  • 2 egg whites
  • 1 C. shredded sharp cheddar cheese
  • 2 Tbsp. grated parmesan cheese
  • salt & pepper to taste

Preheat oven to 350 degrees.  Combine the peppers, onion, quinoa, eggs, egg whites and cheeses in a bowl.   Season with salt and pepper to taste.  Meanwhile, spray 12 muffin tins with a non-stick cooking spray.  Pour the batter into the tins, and bake for 25-30 minutes or until golden brown.
