Easy, Quick Salad Recipes

I love my salads. I eat them nearly daily, either for lunch as a main course or for dinner as a side dish.  They’re a great way to get in your greens and use up your leftovers.  Not just leftover proteins like chicken and salmon, but leftover veggies as well.  These are photos of some of my favorite quick and easy salad recipes.  I keep feta, goat cheese and blue cheese crumbles in my fridge all the time.  I store my walnuts in the freezer and have them on hand all the time as well.  Other things you should always have on hand to make any salad:  red onion, bell peppers, and greens.  I find that arugula and spinach are great, mainly because they are rich in nutrients and stay fresh in the refrigerator for up to a week… sometimes longer.

Great Salad Recipes

Apple Walnut Spinach Salad

2 C arugula and/or spinach leaves
1 diced apple
2 Tbsp. chopped walnuts
1 oz blue cheese crumbles
Balsamic Vinaigrette (I got mine at ALDI)

Mediterranean Kale Salad

Mediterranean Kale Salad

4 C chopped kale
2/3 C diced cucumber
1/2 red onion, sliced
1/3 C sun dried tomatoes, chopped
3 oz. feta cheese
Greek Vinaigrette (I got mine at ALDI)

I tossed it all together and let the dressing soak in for an hour or so then served with chicken breast (makes about 4-5 servings)

Strawberry Balsamic Salad

2 C arugula
1/2 red onion, sliced
2 Tbsp. walnuts
1 oz. goat cheese
balsamic vinaigrette

Throw some strawberries on your salads this week!  This is one of my favorite combos: berries, walnuts, goat cheese and balsamic vinaigrette 👌🏻🍓

Salmon Salad with Greens

Salmon Arugula Salad

2 C arugula
1/2 red onion, sliced
2 Tbsp. walnuts
1 oz. goat cheese
1 oz. salmon
balsamic vinaigrette

Arugula, salmon, red onions, one ounce of goat cheese, walnuts and balsamic vinaigrette 👌🏻 It’s about 350 calories and keeps you satisfied for a long time. Perfect for lunches if you do salmon the night before. I have been getting the Mediterranean salmon at ALDI- it’s so good! Plus, it’s wild-caught, not farm raised.

1/2 small red onion, sliced
1 oz. feta cheese
small bell pepper slices
black olives
Greek vinaigrette
