This veggie-heavy breakfast will leave you full and satisfied yet has very few calories.
- 1/2 c onion, diced
- 1/2 c bell pepper, diced
- 1 small tomato
- one egg + three egg whites
- 1 tsp. extra virgin olive oil
- Italian seasoning (or, use whatever seasoning you have at home and prefer)
- hot pepper sauce
In a medium frying pan, saute the onion and bell pepper until tender. Add the eggs, scramble well. Add the tomato and heat through. Season with Italian seasoning and red pepper sauce (if desired).
