Healthy Crock Pot Recipes: Greek Chicken

This Greek-inspired chicken couldn’t be easier!  You start with a whole chicken, season it with Greek flavors, and let everything slow-cook during the day.

Slow-Cooker Greek Chicken:

  • one whole chicken
  • 2 tsp. minced garlic
  • juice of two lemons
  • 3 Tbsp. unsalted butter
  • 1/4 C. extra virgin olive oil
  • 2 Tbsp. dried oregano
  • 2 tsp. dried parsley
  • Sea salt and pepper to taste

Combine the garlic, lemon juice, butter, olive oil and brush chicken with it.  Sprinkle with oregano.  Cook on low for 6-8 hours.  Optional:  Cut up onion wedges and add diced potatoes under the chicken.  Add one 15-ounce can low sodium chicken broth.  They will absorb the juices.  DELICIOUS!
