Vegan Blueberry Muffins

Vegan Blueberry Muffins
  • 2 large eggs lightly beaten
  • 1 tsp. vanilla 
  • 2 large bananas, mashed
  • 1 Tbsp. raw honey
  •  C. dry old-fashioned oats
  • 1 Tbsp. cinnamon
  •  tsp. baking powder
  •  cups unsweetened almond milk
  • 2 C. fresh blueberries

Preheat your oven to 350.  In mixing bowl, combine the eggs, vanilla, bananas and honey.  Mix well.  Add the dry ingredients:  oats, cinnamon, baking powder, combine.  Next, add the almond milk and combine.  Divide the batter equally into 12 muffin cups.  Top with blueberries. Bake 27-30 minutes, or until golden brown.
