Easy Cabbage Soup
- 1/2 onion, chopped
- 2. carrots, peeled and diced
- 2 tsp. chopped garlic
- 2 C. water
- 1/2 head cabbage, chopped
- 1 14.5-oz. can diced tomatoes
- 1 can tomato sauce
- Ground pepper to taste
In a stockpot over medium heat, saute the onion and carrots until tender. Stir in the garlic. Add the cabbage, tomatoes, tomato sauce, water and chicken stock. Simmer on low until heated through and ready to serve.
