Greek Salad

 

Greek Salad

  • Spinach or other leafy greens
  • 1 medium cucumber, peeled and sliced
  • 1 medium tomato, cut in wedges
  • 5 kalamata olives, sliced
  • 1 Tbsp. pine nuts
  • Red onion
  • 3 oz. grilled chicken breast (optional)

Greek Dressing

  • 1/2 C. extra virgin olive oil
  • 1/4 C. red wine vinegar
  • 1 Tbsp. balsamic vinegar
  • 1/4 C. lemon juice
  • 2 tsp. Dijon mustard
  • 1/2 tsp. Himalayan sea salt
  • Dried herbs to taste – oregano, basil, etc.

Blend dressing together and chill.  Serve over Greek salad.
