Vegan “Cheese” Spread
Cashew cheese spread is a vegan alternative to “real” cheese and it’s pretty easy to make! Here’s how. In a food processor, blend:
- 1 C. unsalted cashews (soak in warm water 1+ hour)
- 2 Tbsp. lemon juice
- 2 cloves garlic
- 1/4 C. nutritional yeast
- 3-4 Tbsp. water
- 2-3 tsp. dijon or brown mustard
- salt and pepper to taste (I just used 1/4 tsp)
- scant amount Chipotle pepper (about 1/8 tsp)
